South Tyrolean cheese is made by hand, using traditional methods. Only natural milk is used to make it. Here is an overview of five main cheese types:
• Fresh cheese is not ripened and has no rind. This type includes varieties such as mozzarella, ricotta, quark or mascarpone.
• Soft cheese has a fairly high water content and is ripened with the use of moulds or rind washes. This type includes Camembert and Brie.
• Semi-hard cheese is fairly soft and moist. Their aroma ranges from mild to zesty, from creamy to spicy.
• Hard cheese has a solid consistency and a high percentage of dry mass. It keeps over long periods of time.
• Sour milk cheese is made from low-fat milk curd or quark, and therefore has virtually no fat. South Tyrolean grey cheese is an example of this type.
