Hostelries and restaurants in Eppan will be serving superb spring dishes and exquisite vegetarian cuisine from 12th to 22nd April. Asparagus, beetroot, leek and much more will be featuring on the menus, alongside Mediterranean delicacies including buffalo mozzarella, goat milk curds, wild herbs and truffles. Over the course of 11 vegetarian days, the inspired Eppan chefs will be indulging vegetarian palates with fresh spring salads, traditional soups, mouth-watering pasta dishes, stuffed ravioli delicacies, creamy risottos and seductively sweet desserts… and all accompanied by first-rate wines from Eppan vineyards.
